Method

  1. Cut the meat into small cubes.
  2. Take a skewer and thread a meat piece, then a piece of garlic, then a piece of ginger, and then a piece of onion. Repeat this until the skewer is covered.
  3. Mix the yoghurt and dry ingredients, i.e. red chilli powder, salt, cumin seeds (or powder) and green chillies.
  4. Put the threaded skewers on a tray and cover it with the yoghurt mixture.
  5. Leave the uncooked kababs for 4 - 5 hours in this mixture.
  6. Remove the mixture from the kababs and grill them, turning constantly or the kababs can be fried in deep hot fat.
  7. Roasting or grilling is preferred as it gives a better taste.
  8. Serve them hot with tomato chutney.
